Synthesis of the "Food of the Future" project, promoted by the UNAM University Food Program, which explored Mexico's food challenges through a participatory prospective process. It documents the search methodology —rural and urban surveys, symposia, competitions, and a future dinner— and presents a new food conception integrating dimensions of consumption, economic accessibility, physical availability, and pathways toward a more equitable and sustainable food system.
